WHere is a simplified interpretation of a cocktail found on our latest drinks list. It's a party-sized pre-mixed that's bursting full of essence of the festive period, rendering it ideal for a celebration. Any leftover syrup you can use for brunch beverages, desserts, or to mix additional servings of this cocktail.
The Bikini Cocktail
Makes enough for 10 servings
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Cocktail (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
For the Cordial: Place all the items in a saucepan, bring to a simmer, mixing to dissolve. Next, take off the burner and let it to cool entirely. Decant to a clean bottle, seal and refrigerate it chilled, it can be stored for about one month.
Preparing the Cocktail Base: Mix the specified liquids into one large bottle, allow it to infuse for an hour, then filter it , ideally through cheesecloth, making it fully clarified.
To serve: Add 85ml of your batch mix into a mixing glass containing ice, and agitate lightly for a minute to cool it down. Strain into a cold coupe glass or equivalent, top with the cranberries adding the final touch by giving it a quick spritz of the essential oil above the glass.
